The Stolkse Boeren is a farmer cheese from the area of Stolwijk. Our farmers make this delightful raw milk cheese from fresh, raw meadow milk yielded by their own cows.
Thanks to the authentic recipe and the natural ripening process on wooden shelves, Stolkse Boeren develops its own, unique flavour.
Raw-milk Gouda cheese
The milk used for our handmade cheese is not pasteurised. This means the milk is not heated up during the cheesemaking process. This is part of the reason for the authentic flavour of the Stolkse Boeren: since the milk is not heated up, its natural properties are preserved. As a result, the raw milk cheese has a fuller, creamier and more powerful flavour than pasteurised cheese.
Ripening our raw Gouda cheese
The farmer makes the cheese, and we create the flavour.
The raw gouda cheese is delightfully creamy when it arrives at our warehouse, but it does not have much flavour yet. The full, persistent flavour that makes farmer cheese so delicious only develops once the product has had the chance to naturally ripen on untreated wooden shelves for a while.
The Stolkse Boeren is ripened in our modern cheese warehouse in the cheese-ripening capital: Bodegraven. Here, our cheesemakers give the raw Gouda cheese the attention and treatment it needs, so it has the perfect flavour when it is delivered to the buyer.
Our raw milk Gouda cheese options
In addition to its own, unique flavour, our raw Gouda cheese is also available in a variety of other, exceptional flavours. The raw milk cheese can be enriched with organic herbs and spices such as cumin, truffle, red or green pesto, fenugreek or olive and tomato.
Moreover, our raw milk Gouda cheese is available in various shapes and weights. We offer several varieties of the Stolkse Boeren in pieces of 16 kg, 12 kg, 2 kg, 1 kg and 500 g. Moreover, we offer a number of pre-cut varieties: cubes, slices and wedges (pieces of 300 grams).

With the Stolkse Boeren, the Van der Heiden family seeks to contribute to the preservation of the cheesemaking craft, the peatland landscape and the welfare of our animals.
